Today’s Breakfast: Tofu Scramble
In small bowl combine eggs, pepper, tofu, cottage cheese, (optional) cream cheese, and soy with chosen spice for flavor. Mix until all are thoroughly incorporated; set aside
Heat non-stick saucepan on medium-high heat, adding a thorough coating of margarine/butter spray (or small tsp of butter/margarine to coat bottom). Make sure to add more if you’re unsure if it’s enough because, honestly? More is better because sticking sucks!
Pour mixed contents into saucepan and cook until those eggs are nice and yellow, stirring constantly! Once satisfied with cooking, remove from heat and pour contents of saucepan into clean bowl. Add slice of cheese on top and let sit for forty-five seconds then stir vigorously.
